Fried Rice and Eggs

The other day I got home very late after being held for hours in traffic. I was cold and tired and was looking around the kitchen for a quick fix as usual. I had eggs, frozen green peas, and rice. I decided to try out a one pot dish and I was not disappointed.
What I had
·         ½ cup uncooked rice
·         Green Peas
·         2 Eggs
·         1 Large Onion chopped
·         3 Tomatoes diced
·         3 Bunches of Dhania
·         Mashed 5 cloves of garlic
What to do
·         Add rice to boiling water and boil for 5 minutes.
·         Remove from heat and set the half-cooked rice aside.
·         Beat the eggs in a dish
·         Fry the onion, garlic and tomatoes with vegetable oil in a separate saucepan
·         Add the green peas
·         Add the spices you desire, could be pepper, soy sauce or mixed spices
·         Add the rice into the mixture and stir to spread the sauce into the rice
·         Continuously stir so the mixture does not stick (The water from the half-cooked rice should be enough)
·         Stir the beat eggs into the mix
·         Stir the chopped dhania into the mix too
·         Reduce the heat and cover to fully cook the rice
As always, you can alter the recipe like substitute the green peas with carrots or French beans.
If it doesn’t work the first time, try again. This works for all recipes. Enjoy!
